•Powdered saffron loses it flavor more rapidly and can easily be adulterated with less-expensive powders like turmeric. Buying cheaper saffron won't save money in the long run, since more will be needed for the same flavor impact.
General rule when substituting powdered saffron:
1/2 teaspoon of saffron threads = 1/4 teaspoon of saffron powder. The general rule is to use 1/2 the amount of powder as you would threads.
•Storing Saffron - Powdered Saffron vs. Saffron Threads: Saffron is very sensitive to light and moisture. Store it in a container away from sunlight. If stored properly, it will last for years. Saffron absorbs other flavors and odors very easily. If you choose to transfer the saffron to a new container, make sure that the container is very clean and odor-free before using.
•Tips & Warnings:
Store your saffron in an airtight container in a cool, dry place. It's best if you use it within a year of purchase because the taste and color may begin to deteriorate.
Don't confuse another plant with the Crocus sativus (saffron crocus). Saffron is only taken from this particular flower, and the Colchicum autumnale (meadow saffron), which is sometimes mistaken for it, is poisonous.
